Add-on to our Japanese knives set made by Rangelrooij. A 240 mm Sujihiki meat knife and/or a 240 mm bread knife.
The blade is composed of 2 layers of softer stainless steel on the outside and has a core of AUS10 steel. In practice easy to maintain with a whetstone or fine ceramic steel. The handle is made of magnolia with a head of walnut. The Kanji (the Jane) on the blade gives the knife its own identity. For both left and right handed use.
